Every year, in May, the international community celebrates Celiac Awareness Month.
Celiac Disease is an autoimmune disorder caused by gluten, a binding protein present in many cereals. It’s estimated that up to 1% of the global population suffers.
Basically, the small intestine becomes inflamed after the consumption of cereals containing gluten - such as wheat, rye, spelt and barley.
